Recipe: Refreshing Pizza Stew

While I never enjoyed meat stews (the texture was blech and fake to me), I did eat a lot of vegetarian stews many years ago. I loved the textures, the flavours, and most of all, how warm it made me on a cold day or when I felt sick. As I started my journey towards health, I started reading food labels and began to understand how unhealthy canned stews really were. They are loaded with salt and preservatives, among other things.

At that point I was 40 pounds overweight. I had started exercising at a gym, but the unhealthy weight (aka FAT) didn’t really start to come off until I stopped eating most prepackaged and processed foods. I even stopped buying canned stews and started making our own at home.

Over the years I cleaned up my diet further and predominantly ate fresh whole foods, like fruits, vegetables, legumes, nuts, seeds and whole grains. As I ate fresher, I didn’t cook as much and my beloved stews fell by the wayside.

Until recently.

I had a stew craving. I wanted flavour, warmth, texture, spices, .. I wanted that yum!

In a time-pressed crunch, I created a stew that satisfied my instincts, was refreshing, and very healthy. My tastebuds, mind, and body thanked me!

 

Don’t cook or heat this one

We want the regenerative benefits of all the micronutrients in their most natural form! When heated higher, enzymes and a whack-load of powerhouse nutrients are broken down and killed. It’s still healthier than clogging your body with canned soups, but why not get the most bang for your buck (and time, energy). Refreshing Pizza Stew

Makes 2 servings

The ingredients evoke a similar taste to pizza sauce and the zucchini gives it a little chunk to create a stew-like texture. Just the right balance of garlic, chili’s, and onion give a perfect balance of flavours to satisfy your stewy cravings. Super healthy for you to boot!

Ingredients

  • 1 large tomato
  • 1 large pepper (any colour, I used orange)
  • 1/2 medium onion
  • 2 medium zucchini
  • 2 clove garlic
  • 1/4 tsp crushed chili pepper

Directions

  • Blend tomato, pepper, onion, garlic, chili pepper until smooth
  • Add chopped zucchini and blend until it’s slightly chunky. You want to evoke a stew feeling.
  • Garnish with sprouts, if desired.
